Yes Bobkat, I feel the same way about those devilled eggs. But I could easily live without their old companion dish, the cheese cube, slice of cabana and little red cocktail onion on a toothpick. [smilie=rlp_smilie_178.gif] Those things are best forgotten.

Flashbacks of the '70's...I got sent to the principal's office for taking my big brother's Skyhooks LP in for show and tell, you know the one where there was a dismembered finger got the LP confiscated and got into more trouble when my big brother was called into the principal's office to explain the "filth" he was listening too :( I think that the principal secretly wanted the LP for herself to listen to.

Here is my favourite recipe from the 70's actually made it for dinner the other night as my mum gave me her Dutch Oven and had found my old school cook book.

Apricot Chicken

Serves 4

4 pieces chicken Maryland
2 tablespoons butter
1 pkt French onion soup
1 tin apricot halves.

Fry chicken pieces in butter on both sides and place in casserole. Blend soup mix with apricots and nectar cover pieces and cook in oven for 1 1/2 -2 hours or until tender.

Serve with rice.

NB:
For a more modern version try caramelising onions to replace the French onion soup and serve with cous cous.

A favourite old 70's recipe best served on a daggy old 70's egg platter. :-D

Thanks for the Apricot chicken recipe Hens & Hobbits. Ah the simplicity of a school recipe, and so tasty. I hope your brother got over his 'thing' with dirty music. Those Skyhooks boys wore their pants too tight. That must have been the problem.

I don't think he ever forgave me for having that LP confiscated th_Noooo.gif Saw Red Simmons at a soccer match the other weekend, forgot about those tight pants of yesteryear...I probably didn't even notice them at that age.

I saw those Mother of Pearl type gold rimmed egg serving dishes at an opp shop recently. Pity I didn't buy them to put those Devilled Eggs on them!

In hindsight, our mothers and grandmothers were very resourceful and skillfully concocted healthy dishes with a few basic ingredients.

The simple things in life are often the best.

Hi, Brownie,

I went into the next township to look for those vintage egg serving plates I saw and didn't buy awhile back, your deviled egg recipe motivated me to head back down the line in search of them. There are six Opp Shops there, I couldn't remember which one had them in. After visiting 5 shops I had all but given up hope and my feet were rather weary, and lo and behold in the very last shop that was a fair hike from the others I found ONE remaining plate and purchased it for the grand sum of $3!

Thank you for the inspiration and flashbacks of '70's cuisine, here is a photo of today's lunch.

Yippee! That looks fantastic Hens and Hobbits. And get a load of the piping nozzle you used. It sure looks great. That plate makes it look super special and it's in such good condition. I'm hunting now for a similar old dish. Thanks for sharing your lunch treat with us. Your persistence has paid off.

than657 Brownie, I had forgotten all about Deviled Eggs...So thanks again for the recipe :-D There were 3 plates in the Opp Shop when I first saw them, I guess I was very lucky to find one, especially at that price.
